The Scottish Blue lobster (Homarus gammarus) is fished all around the Scottish coast. The lobsters are caught alive in creels/pots, located on the seabed and baited with food. This is a sustainable and environmentally friendly form of fishing which has a minimal impact on the surrounding marine environment.

After they have been caught, the lobster are transported to our vivier tanks where they are stored in cool sea water between 4-7c. The cool temperature lowers the metabolic rate of the lobsters and prepares them for shipment by air freight. Blue lobster is a strong animal and they regularly survive for 2-3 days out of water with low mortality.

On arrival at their destination, they can be returned to water. However, in order to avoid thermal shock, the temperature of the water must be no more than 3c from body temperature of the lobster on arrival. The main sizes available in various are Small 400/600g, Medium 600/800g, Large 800/1200g, XL 1200/1700g. XXL 1700g. We also sell lobster with one claw at a more competitive price and they are called Cripple lobster. The lobsters are packed in 5Kg and 10kg  polystyrene boxes.

There is an absorbent pad on the bottom of the box to collect any excess moisture and a jay cloth on top of the box to prevent the cool packs from coming in contact with the lobster. The main season runs from May-December although small quantities may be available from January-April the top part of the shell can be replaced and held in place with bands.
