Brown Crab
Crab Packing Video
The brown crab are caught alive in creels/pots located on the seabed and baited with food. This is a sustainable and environmentally friendly form of fishing which has a minimal impact on the surrounding marine environment. After they have been caught, the crab are held at sea for 24 hours before they are they transported to our vivier tanks. They are held in cool sea water between 4-6c. The cool temperature lowers the metabolic rate of the crab, makes them easier to pack. It also prepares and conditions them for shipment by air freight. On arrival at their destination, they can be returned to water. However, in order to avoid thermal shock and high mortality, the temperature of the water must be no more than 3c from body temperature of the crab on arrival.
The crab should be handled delicately and should not be exposed to bright light or loud noise. The main sizes available in various are 500/800g, 800/1000g and 1000g+.
The Crabs are packed in 15Kg and 10kg polystyrene boxes. There is an absorbent pad on the bottom of the box to collect any excess moisture and a grease proof paper on top of the box to prevent the cool packs from coming in contact with the lobster.
