Langoustine
Langoustine (live)
The Scottish langoustine (Nephrops norvegicus) is fished all around the Scottish coast. They are one of the most popular Scottish seafood products due to the sweet, delicate flavour of the meat.
Langoustines are fished by small boats that normally have tanks on board. After the langoustine are removed from the creels/pots that they are caught in, they are transferred to tanks on board the boat. They are stored in individual cells to prevent contact with each other. This process is known as tubing. The langoustine are then transported to our vivier tanks where they are stored in very cold sea water, no higher than 5c. This lowers their metabolism and conditions them for onward transport. On arrival at their destination, it is unusual for them to be returned to water. Langoustine are a more fragile species than blue lobster and they are highly susceptible to bright light, noise and thermal shock. The main sizes available are XL – 5/9 pieces/kg, L 10/14/ pieces/kg, M – 16/24 pieces/kg S – 26/35 pieces/kg. The langoustine are packed in 4Kg boxes.
The box is divided into individual cells so that they never come into contact with each other. There is an absorbent pad on the bottom of the box to collect any excess moisture and a jay cloth on top of the box to prevent the cool packs from coming in contact with the langoustine.
The season is all year round with noticeable peaks in February-April and low supply from September-November.
